ZUCCHINI GARDEN CHOWDER

I first made this soup in 1997, so it's another oldie-but-goodie!
It's great with a
side salad
and
popovers
.
INGREDIENTS:
1/3 cup butter
2 medium zucchini, chopped
1 medium onion, chopped
2 Tb minced fresh parsley
1 tsp dried basil
1/3 cup all-purpose flour
1 tsp salt
1/4 tsp pepper
3 cups chicken broth
1 tsp lemon juice
1 can (14.5 oz) diced tomatoes
1 can (12 oz) evaporated milk
1 pkg (10 oz) frozen corn
1/4 cup grated Parmesan cheese
1 cup (or more, as desired) grated cheddar cheese
pinch of sugar (optional)
additional chopped parsley (optional)
PREPARATION:
Melt butter in a
6 qt stock pot
.
Saute zucchini, onion, parsley and basil until vegetables are tender.
Stir in flour, salt, and pepper.
Gradually stir in broth.
Add the lemon juice.
Bring to a boil; cook and stir for 2 minutes.
Add tomatoes, evaporated milk and corn.
Bring to a boil.
Reduce heat, cover and simmer for 5 minutes or until corn is tender.
Just before serving, stir in cheese until melted.
Add sugar (if desired).
Garnish with parsley (if desired).
