ZUCCHINI GARDEN CHOWDER

I first made this soup in 1997, so it's another oldie-but-goodie!
It's great with a side salad and popovers.


INGREDIENTS: PREPARATION:
  1. Melt butter in a 6 qt stock pot.
    Saute zucchini, onion, parsley and basil until vegetables are tender.
  2. Stir in flour, salt, and pepper.
    Gradually stir in broth.
    Add the lemon juice.
    Bring to a boil; cook and stir for 2 minutes.
  3. Add tomatoes, evaporated milk and corn.
    Bring to a boil.
    Reduce heat, cover and simmer for 5 minutes or until corn is tender.
  4. Just before serving, stir in cheese until melted.
    Add sugar (if desired).
    Garnish with parsley (if desired).
