POPOVERS

I never used to make popovers very often.
It seemed that no matter how much I greased and floured—or even with paper liners—I'd lose half my popover trying to get it out.
Also, the clean-up was horrific: soaking, scrubbing...
With the silicone baking cups, clean-up is effortless!
No greasing at all, and the popovers literally pop out!
Just a damp cloth quickly wiped over the baking cups and muffin pan, and cleanup is done.
I think the popovers aren't quite as light and airy when done with the silicone cups, but
the ease of clean-up makes up for it!
A heads-up—your eaters will think there's a paper liner on the popovers, because of the
impression made by the silicone cups!
INGREDIENTS:
- 2 eggs
- 1 cup whole milk
- 1 cup flour (fluff with fork, dip, level)
- 1/2 tsp salt
PREPARATION:

Combine all ingredients.
Beat with a fork until lumps are gone; do not overmix.

Put silicone baking cups in a
muffin pan.
Fill each about 2/3 full with batter.

Put in a COLD oven, then set oven to 450°.
Bake for 30 minutes.
Best hot out of the oven!
makes about 8 small popovers
