Carol's Untossed Salad
I always have a big salad in a 4 quart covered Pyrex bowl in our refrigerator.
It keeps fine for about three days (but doesn't usually last that long).
It's always ready-and-waiting as a quick and healthful meal or snack.
We eat a lot of salad with this system!
I would never have thought of eating salad without any dressing—until meeting Ray.
He rarely puts dressing on his salad, so I tried it—and it works! (I do prefer a bit of Italian dressing, though.)
I call this ‘untossed’ because I just layer the ingredients—we're careful to reach down to the bottom
of the bowl when we serve it up.
Layer in big salad bowl:
lettuce (iceberg/romaine/green leaf/red leaf)
cucumber
celery
shredded carrots
shredded zucchini or yellow squash (optional)
tomatoes (roma, other)
sweet red onion (must be fried up for Ray)
coconut flakes
sliced almonds
grated cheddar cheese
To make it a chef salad:
ham
turkey
chicken
chunk cheese (cheddar, muenster)
Can be added:
hard-boiled eggs
artichokes
Sprinkle on top just before serving (optional):
french fried onions
crispy wonton strips
dried cranberries (or other dried fruit)
raisins
sunflower seeds
