BLACK BEANS WITH RICE

This is a meatless meal.
It's good with a small side salad.
Lime wedges are delicious squeezed on the beans, and mango slices add color to the plate.


INGREDIENTS: PREPARATION:
  1. Make a desired amount of rice.
    I use my microwave rice cooker.
  2. In a large frying pan, heat olive oil.
    Cook onion and green pepper until tender.
  3. Stir in tomatoes, beans, thyme and garlic salt.
    Cook for several minutes.
    Add vinegar and pepper sauce; cook for several more minutes.
  4. Serve over rice.
    Garnish with lime wedges and/or sliced mango.
