BLACK BEANS WITH RICE

This is a meatless meal.
It's good with a small
side salad
.
Lime wedges are delicious squeezed on the beans, and mango slices add color to the plate.
INGREDIENTS:
1 Tb olive oil
3/4 cups chopped onion
1 green pepper, chopped fine
1 can (14.5 oz) diced tomatoes
1 can (15 oz) Bush's black beans
1/2 tsp thyme
1 tsp garlic salt
3 Tb cider vinegar
1/2 tsp hot pepper sauce
cooked rice
lime wedges and/or sliced mango
PREPARATION:
Make a desired amount of rice.
I use my
microwave rice cooker
.
In a
large frying pan
, heat olive oil.
Cook onion and green pepper until tender.
Stir in tomatoes, beans, thyme and garlic salt.
Cook for several minutes.
Add vinegar and pepper sauce; cook for several more minutes.
Serve over rice.
Garnish with lime wedges and/or sliced mango.
