This is a recipe from Melissa, Ray's first wife.
It's a bit spicy, but nothing that sour cream can't solve!
Super easy—put it together in the morning, and enjoy it at dinner!
INGREDIENTS:
- 1 lb ground beef or turkey
- 1 large onion, chopped
- 3 14-oz cans pinto beans (drained and rinsed)
- 14 oz can tomatoes with chilis
- 14½ oz can diced tomatoes
- 15 oz can tomato sauce
- 1 pkg dry ranch mix (make sure no msg)
- 1 pkg dry taco seasoning mix
- 15¼ oz can corn, drained
- tortilla chips
PREPARATION:
-
Using sauté (high) on the instant pot, fry up the meat with the onion.
(Sometimes I add some cut-up carrots.)
As needed, drain excess fat.
-
Add all other ingredients. While still on sauté, bring to a boil.
-
Change to slow cook, and cook (covered and vented) for at least four hours.
-
Serve in bowls, garnished with tortilla chips, cheddar cheese, and sour cream.
