ROLLED CHICKEN AND ASPARAGUS

This meal is from Carol's pre-Burns-family days.
It can be made early in the day and marinated (covered) in the refrigerator until time to cook.
It's both beautiful and delicious!
INGREDIENTS:
- 23 boneless chicken breasts, flattened slightly and cut into long, thin strips
- 2430 fresh asparagus spears (snap to break off tough part; parboil)
- oil and vinegar salad dressing
- chopped green onions
- salt and pepper to taste
- sesame seeds
PREPARATION:
- Preheat oven to 350°F.

Wrap each chicken strip (corkscrew fashion) around 23 asparagus spears; place in a baking dish.
(As the chicken cooks, it will stay in the ‘curled’ shape.)

Sprinkle oil and vinegar dressing liberally over the bundles.

Sprinkle with onions, salt, and pepper.

Cover with aluminum foil.
Bake for 15 minutes.

Remove cover.
Sprinkle with sesame seeds.
Bake about 15 more minutes, or until chicken is done.

Serve hot, or refrigerate and serve cold.
Makes about four servings.
