Lazy Lasagne

Easy, easy, easy—and yummy. You can fiddle with the quantities (more/less sauce/cheese/noodles) and it's still good. Instead of just spaghetti sauce, you can add some diced tomatoes (seasoned, if desired) for extra texture and flavor. This perfectly fills my 9" x 13" Pyrex baking dish (mine has a blue lid). I put it together early in the day, refrigerate, then bake at dinner time (it takes a little longer to cook after having been refrigerated).


Watch first:   making the perfect pasta

Preheat oven: 375°F

Ingredients:

16 oz package medium egg noodles
two 24-oz jars spaghetti sauce
24 oz large curd cottage cheese
3 cups shredded mozzarella cheese
grated Parmesan cheese
  1. Cook the noodles (see recommended video above). Drain. Return noodles to cooking pot.
  2. Stir in the spaghetti sauce, cottage cheese, and mozzarella.
  3. Pour into greased casserole(s).
  4. Sprinkle with parmesan cheese.
  5. Bake, uncovered, at 375°F for 20 minutes or until bubbly.
