Chocolate Mint Pinwheels

These are both beautiful and delicious!

Ingredients

one 10-oz pkg (1-1/2 cups) mint-chocolate morsels, divided
3/4 cup butter, softened
1/3 cup sugar
1 egg
1 tsp vanilla extract
2-1/4 cups flour
1/2 tsp salt

Preparation

  1. Melt 1/2 cup morsels over hot (not boiling) water. Stir until smooth. Cool; set aside.
  2. In large bowl, combine butter and sugar; beat until creamy.
  3. Add egg and vanilla extract; beat well. (Note: mixture will look curdled.)
  4. Gradually add flour and salt.
  5. Place 1 cup dough in bowl. Add melted morsels; blend thoroughly. Shape into ball; flatten. Cover with plastic wrap.
  6. Shape remaining dough into ball; flatten. Cover with plastic wrap.
  7. Chill balls until firm, about 1-1/2 hours.
  8. Preheat oven to 375 °F.
  9. Between sheets of waxed paper, roll each ball of dough into a 13" x 9" rectangle. Remove top layers of wax paper. Invert chocolate dough onto plain dough. Peel off wax paper.
  10. Roll up lengthwise, jelly roll style. Cut into 1/4" slices.
  11. Bake at 375 °F for 7–8 minutes. Cool.
  12. Melt the remaining 1 cup morsels over hot (not boiling) water; stir until smooth.
  13. Spread flat side of each cookie with 1/2 slightly rounded teaspoon melted morsels.
  14. Chill.

Makes 3-1/2 dozen cookies.
