I serve this over biscuits, and it is delicious!
Cook both the chicken and sauce in the
instant pot to give only one pot to wash.
INGREDIENTS:
about 4 large chicken breasts, cooked and shredded
8 oz mushrooms (canned or fresh)
1/2 cup (1 stick) butter
1/2 cup flour
2 cups chicken broth
(Use liquid from cooking chicken in instant pot; supplement with
‘Better Than Bouillon’ as needed.)
1-1/2 cups half-and-half
frozen peas (as desired)
pimientos (chopped/drained)
PREPARATION:
Cook chicken:
Cook chicken breasts in instant pot with 2 cups water: poultry setting (or 15 mins manual).
Quick or natural release; cool and shred.
Pour the liquid from the instant pot into a large measuring cup.
Don't wash the instant pot yet—you'll use it again (below).
Make white sauce:
Melt butter in instant pot (saute).
Add mushrooms; cook (as needed) until soft.
Add flour; stir thoroughly until there are no lumps.
Supplement liquid from instant pot with chicken bouillon (as needed) to make 2 cups.
Add chicken broth and half-and-half to instant pot; bring to a boil.
Stir until thickened.
Add peas, pimientos, chicken:
Stir in frozen peas and shredded chicken.
Drain the pimientos and add.
