AVOCADO TUNA SALAD

I like this best after being refrigerated for several hours.
I need to fry up the onions for Ray—they give him a headache otherwise.
No stove, no oven, no instant pot, no air-fryer—just a cutting board and mixing bowl!
INGREDIENTS:
- 15 oz tuna in water, drained and flaked (we prefer BumbleBee solid white albacore)
- 1 English cucumber, cut into small chunks
- 23 ripe avocados (peeled, pitted, cut into chunks)
- 1 small red onion, diced (for Ray: fry in butter first)
- (optional) 1/4 cup chopped fresh cilantro
- 2 Tb lemon juice
- 2 Tb extra virgin olive oil
- 1 tsp sea salt
- 1/8 tsp black pepper
PREPARATION:

In a large bowl, combine tuna, cucumber, avocado, onion, and (optionally) cilantro.

Drizzle with lemon juice, olive oil, salt and pepper; toss to combine.
Serve immediately or refrigerate for several hours.
Serve on a bed of lettuce; top with tomato wedges.
