Bisquick Fruit Cobbler

This is such a quick-and-easy recipe—and delicious!
Use pretty much any fresh fruit you have on hand:
apples, peaches, apricots, blueberries, raspberries, strawberries, pears—mixing fruits is fine!
Ray doesn't like things too sweet, so this calls for very little sugar.
If your fruit doesn't have a lot of natural sweetness, you may want to up the sugar a bit.
This recipe is sized for an 8" x 8" pan; I double it if I'm using my 9" x 13" pan.


Preheat oven: 375°F

Ingredients:

fruit: peeled/sliced/chopped (as desired)
1 cup Bisquick baking mix
1 cup milk
1/2 tsp ground nutmeg
1/2 cup butter, melted
turbinado cane sugar (as desired)
  1. Stir together Bisquick, milk and nutmeg.
    Stir in butter.
    Pour into ungreased baking dish.
  2. Spoon prepared fruit over batter.
    Pat down slightly so fruit is (at least partially) submersed in batter.
  3. Sprinkle (as desired) with turbinado cane sugar.
  4. Bake 50–60 minutes, until golden.
